Ingredients

• 3 cups old-fashioned oats
• 1 1/2 cups flour
• 1 teaspoon baking soda
• 2 teaspoons ground cinnamon
• dash of salt 
• 1 1/4 cups (2 1/2 sticks) butter, softened
• 3/4 cup brown sugar
• 1/2 cup white sugar
• 1 egg
• 1 1/2 teaspoons vanilla

Here's how to make it:

1. Put the oats, flour, baking soda, cinnamon and salt into a blender. Pulse until it looks like flour. (To make the cookies gluten-free, use gluten-free flour. Oats are naturally gluten-free, but to be sure, use gluten-free oats.)
2. In a large mixing bowl, combine the butter, brown sugar, white sugar, egg and vanilla. Add the dry ingredients and stir to combine. 
3. Put by rounded tablespoons full onto cookie sheets. Bake in a preheated 350-degree F oven about 8 to 9 minutes or until set. (The number of cookies you get depends on the size of the cookies you form.)
4. Remove and allow to cool a bit before serving. Store the cookies in an airtight container.
