Cochinita pibil – also called puerco pibil or cochinita con achiote is a slow-cooked pork recipe from the Yucatán Peninsula. This easy Mexican recipe is loaded with flavor and just begs for a bowl of guacamole next to it.

Ingredients

Here's how to make it:

  1. Season the pork butt with salt and pepper, then rub it with the achiote paste. Put it into a slow cooker.
  2. In a bowl, whisk together the orange juice, lemon juice, vinegar, pepper, cumin, paprika and coriander. Pour this mixture over the pork butt. 
  3. Cook on low heat for about 8 hours or until pork is tender. 
  4. When pork is cooked, shred it using two forks or meat claws. Serve with pickled red onions, tortillas and other desired toppings.
