This homemade lemon extract recipe can be used in so many ways and is really easy and inexpensive to make. The only thing required  besides lemon, vodka, a vegetable peeler and a jar  is a little patience. Lemon extract can be used in baked goods, salad dressings to add brightness, marinades or any recipe that you want just a little more lemony goodness. You can also clean with it!

Ingredients

  • lemons
  • vodka

Here's how to make it: 

  1. Using a vegetable peeler, cut thin strips of peel off the lemon. Try to get as little pith (the white part) as you can. (I used 10 lemons.)
  2. Put the lemon peels into a jar, filling it 3/4 full. (I used an 8-ounce mason jar.)
  3. Add the vodka to cover.
  4. Seal the jar, shake, and place in a dark place (like your pantry) for four to six weeks. When the lemon extract is ready, strain it into a clean jar.
