Ingredients
- 1 pound fresh ginger root, peeled
- 1 teaspoon kosher salt
- 1 1/2 cups rice wine vinegar
- 1 cup sugar
Here's how to make it:
- Slice the peeled ginger roots into very thin slices. Put them into a bowl. Add the salt and toss to coat. Let them sit for about 1 hour. After an hour, pat the ginger dry with paper towels and put them into a clean bowl.
- Combine the rice wine vinegar and sugar in a saucepan. Bring to a boil and cook about 2 to 3 minutes. Pour the vinegar mixture over the ginger. Let it sit for about 2 minutes.
- Drain the ginger and lay them onto clean paper towels, then squeeze out as much liquid as you can before placing them in a jar. Store the jar in the refrigerator until ready to serve.
