Chicken
- 1 pound boneless chicken thighs or breasts, cut into bite-sized pieces
- 1 tablespoon vegetable oil
Sauce
- 1/4 cup bourbon
- 1/2 cup low-sodium soy sauce
- 1/4 cup brown sugar
- 4 garlic cloves, minced
- 1 teaspoon cornstarch combined with 1 tablespoon water
Here's how to make it:
- To make the sauce, combine the bourbon, soy sauce, brown sugar and garlic. Whisk to combine. (Use whatever bourbon you like!) Combine the cornstarch and 1 tablespoon water and stir until smooth. Whisk into the sauce. Set aside.
- Heat the oil in a skillet or wok over medium-high heat. Season the chicken with salt and pepper. Cook the chicken in the hot oil until browned and cooked through, about 5 minutes.
- Pour the sauce into the skillet and cook for about 4 to 5 minutes. Garnish with chopped green onions, if desired. Store any leftovers in an airtight container in the fridge for up to three days.
