Onion Chive Eggs Recipe Ensures You Brush Your Teeth After Breakfast Brunch Breakfast

Love onions? Then this easy breakfast or brunch recipe is for you! These fried eggs are loaded with onion, green onion and flavorful chives. Now that's how to start the day!

You could use garlic chives or onion chives for this simple egg recipe. If you want some garlic flavor, add a few cloves of garlic when you cook the onions. For a little heat, add a sprinkling of crushed red pepper flakes or a few dashes of your favorite hot sauce. Serve these flavorful eggs with biscuits, toast or English muffins and fruit

Ingredients

  • 4 eggs
  • 2 tablespoons butter
  • 2 tablespoons chopped chives
  • 1 bunch green onions, sliced
  • 1/4 cup chopped onion
  • crushed red pepper flakes (optional)

Here's how to make it: 

  1. Melt the butter in a skillet. Cook about 2 to 3 minutes or until it begins to lightly brown. 
  2. Add the onions, chives and green onions. Cook, stirring often, until onions are soft, about 2 to 3 minutes. Season with salt and pepper.
  3. Crack the eggs on top of the onions. Cook on low heat until eggs are desired doneness. Season eggs with salt and pepper. Sprinkle with crushed red pepper flakes, if desired.
