On my journey to stop throwing out so much food, I found myself with several almost-empty bags of chips that were mostly crumbs. Instead of tossing them, I came up with this easy chip-crusted pan-fried chicken breast recipe

You can use any flavor of chip – from plain potato chips to nacho cheese chips to vinegar-flavored chips to barbecue chips. I used smoked gouda multigrain chips.

Ingredients

Here's how to make it:

  1. Put the chip crumbs into a plastic zipper bag. (If you don't use plastic in the kitchen, put them in a bowl.) Crush. Season the chicken with salt and pepper and coat in the chip crumbs.
  2. Heat a little olive oil in a skillet. Cook the chicken until golden brown on both sides and cooked through, about 10 to 15 minutes depending on how thick the chicken breasts are.
