These pancakes are kind of like a crepe, so they roll up easily and can be stuffed with all kind of ingredients – from fruit to nut butter to cream cheese. This easy pancake rolls recipe is fun to make with the kids.

Ingredients 

• 1 cup baking mix
• 1 egg
• 1/2 teaspoon vanilla
• 3/4 cup milk
• butter, for cooking

Fillings

• fruit preserves
• lemon curd
• hazelnut spread
• nut butter
• honey
• whipped cream cheese

Here's how to make it: 

1. Combine the baking mix, egg, vanilla and milk in a bowl. 
2. Heat a little butter in a small skillet. Add about 1/8 cup of the batter to the pan and swirl to coat. Cook until bubbles appear, then flip and cook on the other side. Remove to a plate. Repeat with the remaining batter.
3. Fill each pancake with desired filling. Roll up. Pour more of the filling over the top, if desired.
