With simple, wholesome ingredients – and a kick from cayenne – how could you go wrong with this healthy spinach omelette recipe? Good morning.
You'll need:
- 1 tablespoon olive oil
- 1 cup fresh spinach leaves
- 3 eggs
- cayenne pepper oil (optional)
Here's how to make it:
Heat the olive oil in a nonstick skillet. Add the spinach and cook until just wilted. Season with salt and pepper, to taste.
Add the eggs. Cook, stirring gently, until they begin to set.
Stop stirring and continue to cook until eggs are almost set. Season with salt and pepper, to taste. Drizzle with a little cayenne oil.
Gently fold the eggs to create the omelette.
Slide the omelette out of the pan onto a plate. Drizzle with more cayenne oil and garnish with fresh sliced cayenne peppers, if desired.
