Ingredients

Here's how to make it:

  1. Heat the olive oil in a soup pot. Add the shallots and cook about 1 minute.
  2. Add the sweet potatoes, curry paste, coconut milk and broth. Simmer on low heat about 12 to 15 minutes.
  3. Stir in the spinach and cook until wilted. Add the peas and cook another minute.
  4. Add the cilantro and peanuts. Taste and season with salt and pepper, to taste. Garnish with additional cilantro and peanuts. Serve over rice.
