Corn chips in a pie? Absolutely! Whether you're dunking them into your favorite dip or eating them straight out of the bag, Fritos® corn chips are a fan favorite. This Tex-Mex baked Frito pie recipe is a little different than other Frito pie casserole recipes because of the addition of corn and sour cream.
This easy Mexican-inspired dinner recipe uses a combination of fresh and pantry ingredients: ground beef, onion, chili beans (check out the health benefits of beans), corn (check out the health benefits of corn), tomato sauce, diced tomatoes, taco seasoning, cheddar cheese, corn chips, sour cream and green onions for garnish.
To make this high-protein and high-fiber recipe, you brown the beef then add the beans, tomato sauce, diced tomatoes, taco seasoning and half the cheese. Then you spread a cup of the corn chips on the bottom of a baking dish, pour the mixture over the top and bake it for 20 minutes. After removing from the oven, you spread the sour cream over the top, cover with more chips and cheese and bake for five more minutes. The result is a crunchy, creamy, cheesy and gluten-free corn chip casserole your family will love. Wow!

Ingredients
- 1 pound ground beef
- 1 small onion, chopped
- 16 ounces (1 can) chili beans, drained
- 14 ounces (1 can) whole kernel corn, drained
- 8 ounces (1 can) tomato sauce
- 15 ounces (1 can) diced tomatoes
- 1 ounce (1 packet) taco seasoning
- 1 cup shredded cheddar cheese
- 4 cups corn chips
- 1 cup sour cream
- chopped green onions, for garnish (optional)
Here’s how to make it:
- Brown the ground beef with the chopped onion. Drain off any fat.
- Add the beans, tomato sauce, diced tomatoes, corn, taco seasoning and 1/2 cup of the cheddar cheese.
- Spread 1 cup of the corn chips on the bottom of an 8x8-inch baking pan or casserole dish. Pour the chili mixture over the top. Bake in a preheated 350-degree F oven for 20 minutes. (We like Fritos in this recipe, but feel free to use your favorite brand of corn chips. For a gluten-free diet, make sure you buy gluten-free Fritos.)
- Remove from the oven and spread the sour cream over the top. Cover with the remaining corn chips and cheese. Bake about 5 minutes more. Garnish with green onions before serving, if desired. Store the casserole covered in the fridge and reheat in the microwave.
