To make this no-bake recipe you will need the following simple ingredients from your fridge and pantry: cream cheese, powdered sugar, semisweet baking chocolate and vanilla extract. You can make them all with your favorite coating or make a variety. Roll these chocolate candies in ground nuts, cocoa powder, coconut, sprinkles, powdered sugar or cinnamon. The possibilities are endless!
You can melt the baking chocolate in the microwave in 30-second intervals, stirring in between, or in a pot over simmering water. Melting the chocolate takes only a minute or two in the microwave and a few minutes on the stovetop.

- 3 cups powdered sugar
- 4 ounces semisweet baking chocolate, broken up and melted
- 2 teaspoons vanilla

Here's how you make it:
- With an electric mixer, beat the cream cheese until smooth. Add in the sugar. Mix well.
- Beat in the melted chocolate and vanilla. Mix well. Place in the fridge for about an hour.
- Shape the mixture into balls. (The number you get will depend on how big you make them.)
- Roll them in whatever coatings you desire. Store the truffles in an airtight container. They keep longer in the fridge.
