Fun "Carrot" Toast Recipe With Cream Cheese & Broccoli Is a Healthy Addition to Your Easter Menu Holidays Snacks

Parents will do anything to get kids to eat more vegetables. What kid wouldn't want to munch on one of these "carrots?" Easy carrot toasts are not only healthy, they make a fun addition to your Easter table or spring parties and are a nutritious snack anytime.

Don't have broccoli? Any green vegetable will work. Try minced zucchini, spinach, kale or even peas. And if your child doesn't like toasted bread, skip that step.

Ingredients

  • whole-grain bread
  • cream cheese
  • broccoli florets, chopped fine
  • carrots, shredded

Here's how to make it:

  1. Toast the bread. 
  2. With a sharp knife, cut the bread to look like a carrot (see image).
  3. Spread the bread with cream cheese.
  4. Add the shredded carrot and broccoli florets to create the carrot. Serve!

Donna John, we made this with crackers in my preschool class on Friday. They turned out so cute and the kids LOVED them!!! The kids (with help) got to shred the carrots, cut the broccoli, and spread the cream cheese before putting it all together. Such a fun and cute spring snack!
