Here's the incredibly easy and delicious vegetarian recipe to make any dinner of the week that much better.

Servings: 4 to 6

Ingredients

  • 1 quart vegetable broth
  • 1 cup lentils, rinsed
  • 1 onion, chopped
  • 3 cups chopped vegetables of your choice (carrots, kale, celery, spinach, red peppers, etc.)
  • 2 cloves garlic, minced
  • 2 tablespoons Spike Seasoning (or seasonings of your choice) 
  • salt and pepper to taste

Here's how to make it:

  1. Add all ingredients to a large pot.
  2. Bring to a boil and simmer, covered, about 30 minutes.
