Do you find that ice cream sandwiches made with cookies then frozen are impossible to eat? Especially for the kids! Cookies that are not intentionally designed as an "ice cream sandwich cookie" will freeze solid and become impossible to bite through as softening ice cream oozes out the sides. Now you have an additional mess. 

Ice cream sandwiches are always best assembled right before eating. Here is how to plan ahead:

  • Simply spread your softened ice cream of choice into an even layer on a rimmed baking tray and freeze.
  • Cut the firm ice cream using a warm (dry) round cookie cutter the same size as your cookies – or into other shapes.
  • Place the ice cream between fresh-baked cookies.
  • Garnish the sides with whatever you desire, from sprinkles to nuts to chocolate chips!

Trying these tonight with my guys! Great idea. They get so frustrated when we try to make our own and freeze the cookies and then they can't get their teeth through them!
