Ingredients

• 3 tablespoons butter
• 16 ounces corn (fresh, frozen or canned)
• 2 cloves garlic, minced
• 1/3 cup Parmesan cheese, grated
• 1 - 2 tablespoons heavy cream or milk (optional)

Here's how to make it: 

1. Melt the butter in a skillet over medium heat. Add the corn and garlic. Season with salt and black pepper, to taste. (For a spice, add some crushed red pepper flakes or ground cayenne.) Cook, stirring often, for about 5 minutes, or until the corn is beginning to lightly brown.
2. Add the heavy cream, if using. Stir. Sprinkle with the Parmesan cheese. Turn the heat off and let the cheese melt. Serve. Garnish with fresh parsley or basil, if desired.
