Ingredients
Salad
- 30 ounces (2 cans) black beans, drained and rinsed
- 2 cups cooked corn kernels (fresh or defrosted from frozen)
- 2 cups mini cucumbers, sliced
- 1 cup red bell pepper, diced
- 4 green onions (scallions), sliced
- 2 large avocados, diced
Dressing
- 2 large limes, zest and juice
- 3 tablespoons extra virgin olive oil
- 1 1/2 tablespoons Dijon mustard
- 1/2 tablespoon honey
- 1/2 teaspoon garlic powder
- salt and pepper, to taste (optional, but I used about 1/2 teaspoon of each)
Here's how to make it:
- In a large mixing bowl, add the black beans, corn kernels, cucumbers, red peppers and scallions. Stir to combine.
- Gently fold in the avocados.
- In a small mixing bowl, add the lime zest and juice, olive oil, Dijon mustard, honey and garlic powder. Season with salt and pepper, to taste, if desired (I used about 1/2 teaspoon of each). Whisk to combine. Taste to see if you'd like to add any more of any of the ingredients.
- Pour the dressing over the salad and toss gently to combine.
- Transfer to a serving bowl or serve in individual bowls or on plates, etc. Garnish with additional scallions or fresh chives, if desired. Store leftover salad in an airtight container in the refrigerator.
