The simple chicken recipe is so flavorful, it's become a staple in our weekly menu rotation. I like to make a couple pans of this tasty chicken for meal-planning purposes. The chicken turns out so moist and juicy, it's perfect in summer salads and other recipes that call for cooked chicken.

With just five ingredients and ready in only about 30 minutes, this Mediterranean-inspired chicken recipe could not be any easier. It's a high-protein recipe you'll find yourself making again and again (check out the health benefits of protein). And this recipe is a nice addition to a more nutritious Mediterranean diet (not to mention all that Mediterranean flavor)!

To make this savory chicken recipe, here are the gluten-free ingredients you'll need to gather: boneless/skinless chicken breasts, extra-virgin olive oil, dried oregano (check out the health benefits of oregano), garlic powder and smoked paprika (here's why paprika has health benefits, too). You simply coat the chicken in the other ingredients then bake it until cooked through, juicy and golden.

Serve this scrumptious chicken for dinner with your grain of choice (we love it with quinoa), a simple pasta or your favorite fresh vegetables. It's wonderful in salads, making it a perfect lunch choice, too.

Ingredients

• 4 boneless/skinless chicken breasts (or 8 thin-sliced chicken breasts)
• 2 1/2 tablespoons extra virgin olive oil
• 1 teaspoon dried oregano
• 1/2 teaspoon garlic powder
• 1/2 teaspoon smoked paprika
• salt and pepper, to taste (optional, but I used about 1/2 teaspoon of each)
• fresh basil or parsley, optional garnish

Here's how to make it:

1. If using thick chicken breasts, place the chicken inside a sealed zip-top bag or between pieces of plastic wrap. Using a meat mallet or rolling pin, gently pound and/or roll out the chicken in order to tenderize it and create uniform thickness. Getting chicken to 1/3-inch to 1/2-inch thickness allows for more uniform cooking and tender chicken. Alternatively, you could use thin-sliced chicken breasts.
2. In a 13x9-inch baking pan (or two, if needed), add the olive oil, oregano, garlic powder and paprika. Add salt and pepper, to taste, if desired. Stir to combine.
3. Place the chicken into the baking dish. Using tongs or a large fork, coat the chicken in the olive oil mixture.
4. Bake in an oven that's been preheated to 375 degrees F until cooked through, juicy and golden, about 18 to 20 minutes. (Chicken is considered done when it reaches 165 degrees F internal temperature on a food thermometer.)
5. Garnish with fresh basil or parsley, if desired, and serve.
6. Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
