I’m so used to making traditional beef or turkey burgers, but when I found this recipe for a Mediterranean salmon burgers I was intrigued to try it. This flavorful Mediterranean salmon burgers recipe is assembled in just 10 minutes. The healthy pan-fried salmon patties have a wonderful mix of flavors from sumac and fresh herbs.
These Mediterranean Diet-inspired salmon burgers are great served on a bun, or keep it low-carb as a lettuce wrap or on top of a salad. I love to drizzle some homemade tzatziki sauce over the top, and add burger toppings like tomato, lettuce and onions.
Here is your shopping list for this healthy, high-protein salmon recipe: skinless salmon fillets (read about the health benefits of salmon), Dijon mustard, green onions (scallions), parsley or other fresh herbs, ground coriander, sumac, sweet paprika, black pepper, kosher salt, breadcrumbs (regular or gluten-free), extra-virgin olive oil and lemons.

Ingredients
- 1 1/2 pounds skinless salmon fillet (or slice off the skin), cut into bite-sized pieces
- 2 teaspoons Dijon mustard
- 2 - 3 tablespoons minced green onions (scallions)
- 1 cup chopped flat-leaf parsley leaves and tender stems (or 1 cup mixed fresh herbs)
- 1 teaspoon ground coriander
- 1 teaspoon sumac
- 1/2 teaspoon sweet paprika
- 1/2 teaspoon black pepper
- kosher salt, to taste
- 1/3 cup unseasoned breadcrumbs (or gluten-free breadcrumbs)
- 3 tablespoons extra virgin olive oil
- 1 lemon, halved
Optional For Serving
- tzatziki sauce
- baby arugula or lettuce
- 1 tomato, sliced
- 1 red onion, sliced
- toasted buns (ciabatta or whole-wheat buns)
Here's how to make it:
- Make the salmon burgers by adding 1/4 of the salmon and the mustard to a food processor. Turn the processor on until the mixture turns into a paste. Scrape the salmon into a medium bowl.
- Add the rest of the salmon to the food processor and pulse a few time to chop the salmon in coarse pieces. Don’t overmix! You want the salmon to be chunky. Scrape it into the bowl with the salmon paste.
- Add the onions, herbs, coriander, sumac, paprika, pepper and a good pinch of salt. Mix well. Cover and place bowl in the fridge for 30 minutes.
- Form the salmon into 4 patties and place them onto parchment paper.
- Coat the patties with the breadcrumbs.
- Heat the olive oil in a large frying pan on medium-high. Place the patties into the oil. Cook without moving for 2 minutes.
- Turn the patties over and cook the other side for 2 to 3 more minutes until the patties reach your desired temperature (115 degrees F to 120 degrees F for medium-rare).
- Make the burgers to your liking, with our without buns, and enjoy!
