To make these simple and delicious biscuits, here are the wholesome ingredients you'll need to gather: eggs, extra virgin olive oil, Greek yogurt, fresh baby spinach (check out the health benefits of spinach), fresh dill, onion powder, feta cheese (here's why feta may be the healthiest cheese in the world), Parmesan cheese, flour (all-purpose or gluten-free), baking powder, baking soda and salt. All you do is combine the ingredients, form the dough into biscuits then bake them until they're a beautiful golden brown. So easy!

Ingredients
- 2 eggs
- 1/2 cup extra virgin olive oil
- 1/2 cup plain Greek yogurt
- 1 teaspoon onion powder
- 3 cups fresh baby spinach, chopped or torn into smaller pieces
- 2 tablespoons fresh dill, chopped
- 8 ounces feta cheese, crumbled
- 1 cup Parmesan cheese, shredded
- 1 1/2 cups flour (all-purpose flour or gluten-free flour)
- 1 1/2 teaspoons baking powder
- 1/3 teaspoon baking soda
- 3/4 teaspoon salt
- black pepper, to taste (optional, but I used about 1/3 teaspoon)
Here's how to make it:
- In a large mixing bowl, combine the eggs, olive oil and Greek yogurt. Whisk to combine.
- Add the onion powder, and the pepper, if using. Whisk to combine.
- Add the spinach, dill, feta and Parmesan. Stir to combine.
- In a medium mixing bowl, add the flour, baking powder, baking soda and salt. Whisk to combine. (To make these biscuits gluten-free, use gluten-free flour.)
- Add the dry ingredients to the wet ingredients then stir to combine until it becomes a dough.
- Using a large spoon or your clean hands, form dough into 12 biscuits and place onto baking sheets that have been lined with parchment paper. Shape the dough into circles and flatten them a bit. (The number of biscuits depends on the size of circles you form. Be sure to leave a couple of inches between biscuits since they will expand as they bake.)
- Bake in an oven that's been preheated to 350 degrees F until golden brown, about 15 to 20 minutes.
- Remove from oven and allow to cool for a few minutes before serving. Store leftover biscuits in an airtight container.
