Plus, the mixed berry Greek yogurt or skyr (skyr is an Icelandic dairy product with a high protein content and plenty of vitamins) adds additional sweet berry flavor. The high-fiber recipe takes only about five minutes to prep the night before you plan to serve it. Here are the nourishing ingredients needed to make this wholesome oatmeal recipe: milk, mixed berry Greek yogurt (or skyr), vanilla extract, rolled oats, chia seeds (or ground flax), salt and fresh berries. I used strawberries, blueberries and blackberries, but you can choose your favorites. All you do is combine the gluten-free ingredients then let them soak in an airtight container in the refrigerator for at least four hours (or overnight) before serving.
You can enjoy this nutritious and delicious overnight oats recipe straight out of the refrigerator or warm it up. Add a drizzle of honey on top if you like. Ingredients
- 1 cup milk of choice
- 5.3 ounces (1 container) mixed berry Greek yogurt (or skyr)
- 1 teaspoon vanilla extract
- 1 1/4 cups rolled oats
- 2 tablespoons chia seeds or ground flax
- 1/4 teaspoon salt
- 1 1/2 cups fresh berries (I used strawberries, blueberries and blackberries)
- additional berries and/or chopped nuts, for garnish (optional)
Here's how to make it:
- In a large mixing bowl, add the milk, Greek yogurt and vanilla. Whisk to combine. (Instead of Greek yogurt, you can use mixed berry skyr.)
- Add the oats, chia and salt. Stir to combine. (Oats are naturally gluten-free, but if you need to be sure, use gluten-free oats.)
- Fold in the berries.
- Transfer the mixture to an airtight container, such as a mason jar or food storage container. Cover with the lid and refrigerate for at least 4 hours or overnight.
- Remove from the refrigerator and serve in bowls (or enjoy straight from the jar).
- Top with additional berries, sliced fruit, chopped nuts, etc. Serve cold or warm. Store leftover oats in an airtight container in the refrigerator.
