When you just need a little sweetness in your life and don’t have a lot of time, this oat flour chocolate chip cookies recipe is just what you need! These little gems are so delicious and bake up tasting a bit like caramel from the brown sugar, and nice and crunchy from the added nuts. These wonderful gluten-free oat flour walnut chocolate chip cookies might just become your new favorite cookie recipe!
To make this gluten-free cookie recipe you will need the following ingredients from your pantry and fridge: oat flour, baking soda, salt, brown sugar, granulated sugar, olive oil, milk, vanilla extract, chocolate chips walnuts (or pecans if you prefer) and optional flakey sea salt if you like sweet and salty. Baking Tip: No need to buy oat flour. I made my own by placing oats in my high-speed blender and blending on high until the oats completely break down. Just remember if you want the cookies to be gluten-free, make sure the oats are labeled gluten-free!

Ingredients
- 2 cups oat flour, sifted
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1/4 cup olive oil
- 1/3 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips (milk chocolate chips or dark chocolate chips)
- 1/3 cup walnuts or pecans, chopped
- flaky sea salt (optional)
Here's how to make it:
- Mix flour, baking soda and salt in a large bowl. Whisk to combine.
- Add both sugars and mix well.
- Add olive oil, milk and vanilla. Whisk to combine.
- Add the nuts and chocolate chips. Stir to combine. (Use a fork or your clean hands.)
- Place bowl in the fridge for at least 30 minutes to chill.
- When you are 10 minutes away from wanting to bake the cookies, preheat your oven to 375 degrees F. Form the dough into balls (about 2 tablespoons). Place on a parchment paper-lined baking sheet, leaving about 3 inches in between each cookie to allow for spreading.
- Bake for 8 to 10 minutes or until cookies are golden. Remove from oven and cool on the tray for 10 minutes. Sprinkle with flaky salt, if desired, and enjoy! Store the cookies in an airtight container to keep them fresh.
