Here's what you need to make this high-protein dinner: extra virgin olive oil, boneless/skinless chicken breast, garlic powder, oregano, fresh broccoli, spinach dip and mozzarella cheese. You combine the ingredients in the skillet on the stovetop, then bake until it's a bubbling golden brown. Easy and cheesy!

Ingredients
- 2 tablespoons extra virgin olive oil
- 1 pound boneless/skinless chicken breast, cut into chunks of similar size
- 3 cups broccoli, chopped
- 1/2 teaspoon garlic powder (or to taste)
- 1/2 teaspoon oregano (or to taste)
- 12 ounces prepared spinach dip (store-bought or make your own)
- 8 ounces mozzarella cheese, shredded (or Parmesan cheese)
- salt and pepper, to taste (optional, but I used about a 1/3 teaspoon of each)
- fresh parsley (optional garnish)
Here's how to make it:
- In a cast iron or ovenproof skillet on the stovetop over medium-high heat, add the olive oil, chicken, broccoli, garlic powder and oregano. Season with salt and pepper, to taste, if desired. Stir to combine and sauté until broccoli is crisp-tender, about 4 minutes. Remove from heat.
- Spread the spinach dip evenly over the chicken and broccoli mixture.
- Top with the mozzarella cheese. (You also could use Parmesan cheese.)
- Bake at 375 degrees F until casserole is golden brown and bubbling, about 15 to 20 minutes. (Chicken is done when it reaches an internal temperature of 165 degrees F.)
- Serve on its own or over your favorite pasta or grain. Garnish with fresh parsley, if desired. Store any leftovers in an airtight container in the refrigerator and reheat in the microwave.
