Creamed spinach lovers, I have a great new recipe for you. This decadent Boursin creamed spinach recipe with mushrooms is darn delicious! The addition of cremini mushrooms makes this recipe extra special, but the Boursin cheese takes it to an all-new level. Plus, you get the health benefits of spinach and the health benefits of mushrooms.
Boursin cheese is one of my favorite "secret" ingredients. It's amazing served with bread or crackers as an appetizer, but I like it even more as an ingredient that adds a creamy garlic flavor to my dishes. Boursin is a rich spreadable cheese made with garlic, parsley and chives. This wonderful concoction was created by François Boursin, a young French cheesemaker. His recipe was inspired by fromage frais, a traditional French dish that blends garlic, fresh cream, soft cheese, herbs, salt and pepper. François worked on his recipe for two years before debuting Boursin in 1963. I highly recommend using his creation as an ingredient in a variety of savory recipes!
Here's the list of gluten-free ingredients you'll need for this decadent garlic creamed spinach recipe: extra virgin olive oil, onion (check out the health benefits of onions), cremini mushrooms, baby spinach, Boursin cheese and heavy whipping cream. You cook everything in the same pan and it's ready in only about 15 minutes!
You can serve this rich and creamy spinach and mushroom dish over your favorite pasta, grain or potatoes. It's a wonderful side dish all on its own, but it also makes for a succulent sauce to be served with steak, chicken, pork or seafood. I served it for dinner over rice with a piece of Mediterranean salmon. So easy and delicious!

Ingredients
- 2 tablespoons extra virgin olive oil
- 3/4 cup onion, diced
- 8 ounces baby bella cremini mushrooms, sliced
- 10 ounces baby spinach
- 5.3 ounces (1 package) Boursin garlic and fine herb cheese
- 1/2 cup heavy whipping cream
- 1/4 teaspoon salt and 1/4 teaspoon pepper, or to taste (optional)
Here's how to make it:
- In a large skillet or saucepan with sides, add the olive oil, onions and mushrooms. Cook until crisp-tender, about 2 minutes.
- Add the spinach and cook until wilted and integrated, about 2 minutes.
- Add the Boursin and the heavy cream. Season with salt and pepper, if desired. Stir until the cheese melts and the sauce thickens, about 3 minutes.
- Serve immediately. Store leftovers in an airtight container in the refrigerator and reheat in the microwave (add a bit of cream or milk, if needed).
