Easy chicken dinners are a must during the busy week, but they have to taste great, too. This savory slow-cooker teriyaki chicken recipe is easy and delicious. It smells so good that even while it's cooking it'll make your mouth water!
This succulent slow-cooker chicken is versatile, too. Serve it on its own, over rice or even on your favorite bread roll. The juicy shredded chicken is packed with flavor and protein (learn about the health benefits of protein).
To make this easy Asian-inspired recipe, you'll need to gather these simple ingredients: boneless/skinless chicken breasts or thighs, soy sauce or tamari, water, honey, apple cider vinegar, minced garlic, minced ginger and cornstarch. You mix up the sauce, pour it over the chicken in the slow cooker, cook the chicken then shred it and serve.
This tender shredded chicken is delicious served on Hawaiian rolls, over rice or with fresh vegetables or other favorite side dishes. I served it with a side of fresh broccoli, and some of us opted to make sliders. We'll be making this gluten-free recipe again soon!

Ingredients
- 2 pounds boneless/skinless chicken breasts (or thighs)
- 1/2 cup soy sauce (or low-sodium soy sauce or tamari, for gluten-free)
- 1/2 cup water
- 1/3 cup honey (or brown sugar)
- 1 1/2 tablespoons apple cider vinegar
- 1 1/2 tablespoons cornstarch
- 3 teaspoons minced garlic
- 1 1/2 teaspoons minced ginger
Here's how to make it:
- In a medium mixing bowl, add all the ingredients except for the chicken. Whisk to combine.
- In your slow cooker, add the chicken. Pour the sauce over the chicken, ensuring it's coated in the sauce.
- Cook for 4 to 6 hours on high or for 6 to 8 hours on low. Chicken is done when it reaches 165 degrees F on a food thermometer.
- Using a slotted spoon, remove chicken from slow cooker and put it into a large mixing bowl. Using two forks, shred the chicken to your desired consistency.
- Put the chicken back into the sauce in the slow cooker and stir to combine.
- Serve on its own, on your favorite bread or over rice. Store leftovers in an airtight container and reheat in the microwave.
