Protein is all the rage right now. On the radio this morning I heard a story about people eating chunks or Parmesan cheese instead of protein bars. Parmesan cheese is one of my favorite ingredients (and weaknesses), so this sounded fine to me. Cottage cheese is another hot ingredient right now. Cottage cheese has many health benefits, with a big one being that it is protein rich. One cup of cottage cheese contains about 25 grams of healthy protein. This high-protein chicken salad recipe not only has cottage cheese and Parmesan cheese, but protein-rich eggs and chicken.
To make this high-protein recipe you will need just nine ingredients. Here is what to grab from your fridge and pantry: cooked chicken breast, cottage cheese, red onion, celery, mayonnaise, Dijon mustard or honey mustard, garlic powder, hardboiled eggs and grated Parmesan cheese. After blending the cottage cheese until it is creamy, all the ingredients get stirred together. Season with salt and black pepper (check out the health benefits of black pepper), and it's ready to go.
Serve this creamy gluten-free chicken salad recipe for lunch or dinner. You can pile it onto salad greens, use it as a sandwich filling or scoop it up with crackers or potato chips. For even more protein and Parmesan flavor, top it with a Parmesan crisp!

Ingredients
- 3 cups shredded or diced chicken breast, cooked
- 1 cup cottage cheese
- 1/2 cup red onion, diced
- 1/2 cup celery, diced
- 1/4 - 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard or honey mustard
- 1/2 teaspoon garlic powder
- 2 hardboiled eggs, chopped
- 1/4 - 1/3 cup grated Parmesan cheese
Here's how to make it:
- Put the cottage cheese into a blender and blend until smooth. (You could also leave the curds, if preferred, and skip this step.)
- Put the cottage cheese and remaining ingredients into a bowl. Season to taste with salt and black pepper. I used Morton Nature's Seasonings. Add mayonnaise until you reach your desired consistency. Use honey mustard if you like a sweet chicken salad, and Dijon mustard if you like that twang. You could use Greek yogurt instead of mayonnaise.
- Serve over salad greens, on bread or with crackers. Store the chicken salad in an airtight container in the fridge.
