It is cold here and a bunch of snow just dumped on us. I was looking for a hearty, good-for-the-soul dinner and this beef tips in gravy recipe did the trick. The tender slow-cooked beef tips are very rich in flavor and easy to make with simple ingredients.
To make this slow-cooker recipe you only need eight ingredients and some water. Here is your shopping list: lean beef stew meat, beef broth (you can use low-sodium beef broth), condensed French onion soup, Worcestershire sauce, a packet of brown gravy mix, fresh garlic, ketchup and cornstarch. The meal cooks up on low heat in a slow cooker in about six to eight hours.
There's no need to buy a higher cut of beef like sirloin since you are cooking low and slow, so this is what I consider a budget recipe. Serve the tender chunks of beef for dinner on a bed of medium egg noodles or some mashed potatoes and you will want take a nap afterwards. Rolls or bread are highly recommended by my wife to sop up the delicious brown gravy.

Ingredients
- 2 pounds lean beef stew meat
- 1 1/2 cups beef broth
- 10.5 ounces (1 can) condensed French onion soup
- 2 tablespoons Worcestershire sauce
- .87 ounces (1 envelope) brown gravy mix
- 2 teaspoons minced garlic
- 2 tablespoons ketchup
- 3 tablespoons cornstarch
- 3 tablespoons water
Here's how to make it:
- Combine the beef broth, French onion soup, Worcestershire sauce, gravy mix, garlic and ketchup in the slow cooker. Whisk together.
- Add the stew meat and stir to combine with the liquid.
- Cook on low for 6 to 8 hours. (Cook on low to ensure the lean meat comes out tender. Unlike my old Rival slow cooker, my Ninja Multicooker does not give a soft boil on low. After about four hours, I switched to high for about 20 minutes to get good soft boil. This will help the gravy mix thicken and it enhances the flavor.)
- About 15 minutes before serving, combine the cornstarch and water and add to the slow cooker while stirring. Serve over noodles or potatoes.
