My local grocery store had the most beautiful broccoli the other day. Deep green, lots of leaves and fresh from the farm. Instead of large crowns, they were smaller broccoli bundles. Broccoli bundles? The recipe creator in me got to thinking about how cool it would be to serve guests their own individual broccoli bundle, with a knife for cutting. Enter this simple broccoli recipe.
To make this easy vegetable side dish you just need fresh broccoli (don't forget the health benefits of broccoli), olive oil and your desired seasonings. If you can't find smaller broccoli bundles, just cut a larger head into smaller pieces that container multiple stems. The broccoli is cooked in a little water, then gets a drizzle of olive oil and a sprinkle of seasonings. The healthy olive oil helps the broccoli char and get lightly brown in the pan. (Remember, brown takes you to flavortown!)
These sweet little green bundles look impressive beside your Christmas ham or turkey, but are simple enough to make as a side dish on Monday with that meatloaf. It's funny how just simply presenting something differently changes the ewws to ahhhs. Try this recipe on your family and see what they think.

Ingredients
- fresh broccoli crowns, cut into small bundles
- olive oil
Seasoning Ideas
- garlic salt
- garlic powder
- onion powder
- balsamic vinegar
- soy sauce
- seasoned salt
- salt and black pepper
- Mediterranean seasoning
- Italian seasoning
- butter
- crushed red pepper flakes
- lemon pepper seasoning
Recipe Notes
- If you can't find small bundles of broccoli, simply cut your head of broccoli into small bundles with a sharp knife.
- You could skip the charring part of the recipe and serve them bright green.
- Don't want to add seasoning? Skip it! But a little salt and black pepper is usually a good idea.
- Plan for one broccoli bundle per person.
Here's how to make it:
- Fill a saucepan with about 1/4 inch of water. Put the broccoli bundles into the water and bring to a simmer.
- Cover the saucepan and cook until the broccoli reaches your desired doneness, about 5 to 8 minutes, and the water has evaporated. (You can add more water during the cooking process, if needed.)
- Drizzle the broccoli with olive oil and sprinkle with desired seasonings. Cook over medium heat, flipping often, until just beginning to char.
- Serve each person one bundle. Don't forget a knife so they can cut it into stalks.
