You might not think of using cottage cheese in a salmon patties recipe (I know I wouldn't have). But as it turns out, these high-protein salmon patties are dang delicious. Here are the simple ingredients you need to make this gluten-free seafood dinner recipe: cottage cheese, eggs, cooked or canned salmon, onion powder, garlic powder, Parmesan cheese, almond flour, fresh spinach and extra virgin olive oil. You whip the cottage cheese with the eggs in a blender. Next, you combine all the ingredients to create the salmon patties. Then, you fry the fritters in olive oil until cooked through and golden. So quick and easy, and ready in only about 30 minutes!
I served these tasty salmon patties as an appetizer with my easy honey mustard yogurt dipping sauce. They make a fun snack, but they're also delicious served on a bun for lunch or with your favorite side dishes for dinner.

Ingredients
- 1 cup cottage cheese, drained
- 2 eggs
- 6 ounces cooked or canned salmon, shredded
- 1/2 cup Parmesan cheese, shredded
- 1/2 cup almond flour
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 4 ounces fresh spinach, chopped
- 1 1/2 tablespoons extra virgin olive oil, for frying
Here's how to make it:
- To a blender, add the eggs and cottage cheese. Whip until smooth, about 30 seconds.
- Pour the cottage cheese mixture into a large mixing bowl.
- Add the salmon, Parmesan cheese, almond flour, onion powder, garlic powder and spinach. Season with salt and pepper, to taste, if desired. Stir to combine. (Instead of almond flour, you can use panko breadcrumbs, if desired.)
- Using your clean hands, form the mixture into patties. (The number of patties will depend on how big you make each patty. If you want to make "burgers," then make your patties larger to fit a bun.)
- In a skillet or griddle over medium-high heat, add olive oil to coat. Cook (in batches) patties until they're cooked through and golden, about 3 to 5 minutes per side, or until desired doneness.
- Serve warm with your favorite dipping sauce or side dishes. Store leftovers in an airtight container in the refrigerator. Reheat in the microwave or, for maximum crispiness, in a skillet or in the oven.
