To make this apple cake you will need to gather the following ingredients from your fridge and pantry: fresh apples, flour, butter, granulated sugar, an egg, vanilla extract, applesauce, lemons for juicing and zesting, ground cinnamon and brown sugar.

Cake
- 3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
- 1/3 cup granulated sugar
- 1 egg
- 1 1/2 teaspoons vanilla extract
- 2 cups flour
- 5 apples, peeled and chopped fine
- 1 1/4 cups applesauce
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1/2 - 1 teaspoon cinnamon
Streusel Topping
- 3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
- 1/2 cup brown sugar
- 2 cups flour
Recipe Notes
- If you prefer not to peel your apples, that's fine. Skip that step.
- For a gluten-free cake, use gluten-free flour.
- Store the cake in an airtight container to keep it fresh. Reheat in the microwave if you want to serve the cake warm.
Here's how to make it:
- To make the cake, cream together the butter and granulated sugar until light and fluffy with an electric mixer. Add the egg and vanilla. Mix well. Add the flour and mix until just combined. Spread the dough onto the bottom of a buttered or parchment paper-lined 13x9-inch baking pan. Refrigerate while you work on the apples.
- In a mixing bowl, toss the apples with the lemon juice, lemon zest, cinnamon and applesauce. Set aside.
- To make the streusel topping, cream together the butter and brown sugar until light and fluffy. Add the flour and stir until it resembles coarse crumbs.
- Spread the apples evenly over the dough.
- Spread the streusel topping evenly over the dough, pressing it down slightly with your hands.
- Bake in a preheated 350-degree F oven for about 45 minutes, or until golden. Sprinkle with ground cinnamon, if desired, and serve warm or at room temperature.
