Growing up, we ate southern fried cabbage. That was it, besides cole slaw. Now I cook cabbage in so many different ways. Cabbage, once an overlooked vegetable, is now in the spotlight. Well deserved, cabbage! Cabbage is delicious, easy to cook, inexpensive and has a long list of impressive health benefits.
This simple comfort food recipe for ground beef and cabbage is easy, quick and a satisfying dinner that takes about 25 minutes to prepare – from start to finish. The ground beef and cabbage are simmered with fire-roasted tomatoes and spices in a skillet and create a meal that will keep them coming back for more.
To make this easy gluten-free, high-protein recipe you will need a pound of ground beef, an onion, garlic, a bouillon cube, ground cumin, smoked paprika, a can of fire-roasted tomatoes and a head of green cabbage.
This meat and vegetable recipe can be served as a complete dinner or with your favorite side dishes. I served mine with a salad and fresh pattypan squash from my garden. When my husband first saw the dish cooking, he thought there was rice in it. Not a bad idea! You could stir in some cooked rice and it would be like deconstructed cabbage rolls.

Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bouillon cube (beef or chicken)
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 15 ounces (1 can) fire-roasted tomatoes (do not drain)
- 1 small green cabbage, shredded or chopped
Here's how to make it:
- Cook the ground beef, onion and garlic in a skillet until meat is cooked through, about 4 minutes. Break the meat up as you stir. Season with salt and pepper.
- Add the can of tomatoes with the juice, bouillon cube, cumin and smoked paprika. (You can use a regular can of diced tomatoes if you don't like fire-roasted tomatoes. For some spice, add some ground cayenne or crushed red pepper flakes.)
- Cook, stirring, about 1 minute.
- Add the cabbage. Depending on how much cabbage you have and the size of your pan, you may have to add it in two batches.
- Cook, stirring often, until cabbage is to desired tenderness, about 10 to 15 minutes.
- Season with salt and pepper. Taste and adjusts seasonings, if needed. (You could sprinkle on some grated cheese at the end of cooking.) Store any leftovers in an airtight container in the fridge for up to four days.
