Ingredients
- steaks
- olive oil or truffle oil
- coarse salt
- coarse ground black pepper
- brown sugar
- ground coffee
Recipe Notes
- I recommend either ribeye steaks or New York strip steaks for this recipe.
- I used kosher salt for this recipe.
- I recommend a fine coffee like an expresso grind, but use your favorite coffee.
- Be sure to let the steaks rest before slicing.
Here's how to make it.
- Let steaks come to room temperature.
- Coat with olive oil or truffle oil.
- Apply a liberal coating of coarse salt.
- Apply an even coat of the coarse ground pepper.
- Sprinkle with brown sugar (about 1/2 to 1 teaspoon)
- Sprinkle with coffee (about 1/2 to 1 teaspoon).
- Use a spoon to massage everything into the steak. Turn over and repeat on second side.
- Grill or broil as you would any steak. Use an instant read thermometer to get your desired doneness. I grilled mine to an internal temperature of 125 degrees F. Please keep in mind the internal temperature will rise an additional 5 degrees F after removing from heat.
- Let sit for 5 minutes before eating. This allows the juices to properly distribute.
