Ingredients
Crust
- 1/2 pound (1 cup) unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
Filling
- 5 large eggs
- 2 3/4 cups granulated sugar
- 1 tablespoon lemon zest
- 1 tablespoon lime zest
- 1/4 cup lemon juice
- 1/2 cup lime juice
- 1 cup flour
Recipe Notes
- Fresh is best when it comes to citrus juices. So if you can, squeeze your own. For this recipe, you need the zest, anyway! In a pinch, you could use bottled lemon and lime juice.
- Store the bars in an airtight container to keep them fresh.
Here's how to make it:
- Cream the sugar and butter together in a large bowl. Mix in the flour until it becomes a soft dough.
- Spray a 13x9-inch Pyrex baking dish with nonstick spray and press the dough into the pan. Bake the crust in a preheated 350-degree F oven for 15 minutes. Remove from the oven.
- For the filling, stir the sugar and eggs together in a large bowl. Stir in the flour, zest, and lemon and lime juice and mix well. Pour on top of the baked crust. Bake until its set, about 35 minutes.
- Remove from the oven and allow it to cool. Sprinkle powdered sugar over the cooled lemon lime bars. Cut into 12 squares and serve.
