I love easy breakfast casseroles that also work great for lunch or dinner. This fun spinach "brownies" recipe is simple to put together and packed with nutritious spinach and creamy mozzarella. The addition of the flour (any type you prefer) makes the texture similar to a brownie, and a wonderful change for a breakfast casserole or a delicious side dish with any dinner. It's the perfect bite of protein any time!
To make this easy spinach recipe you will need spinach, flour, salt, baking powder, eggs, milk, butter, onion and mozzarella cheese. The wholesome ingredients are mixed together, spread into a baking pan and baked for about 30 minutes. Let the spinach brownies cool a bit before cutting them into squares. Ingredients
- 16 ounces frozen chopped spinach, thawed, or fresh spinach, steamed
- 1 cup all-purpose flour or gluten-free flour
- 1 teaspoon salt (or to taste)
- 1 teaspoon baking powder
- 2 eggs
- 1 cup milk
- 1/2 cup butter, melted
- 1 medium onion, chopped
- 8 ounces shredded mozzarella cheese
Here's how to make it:
- Press out excess water from your spinach in a colander then use a paper towel to wring out as much liquid as possible. Set to the side.
- In a medium mixing bowl, combine flour, salt and baking powder. (You can use any flour. The photos shown are with gluten-free flour.)
- Add in eggs, milk and melted butter. Stir to blend.
- Add onion, spinach and mozzarella cheese. Mix well to combine.
- Spread the mixture into a greased 13x9-inch baking pan.
- Bake in a preheated 375-degree F oven for about 30 to 35 minutes, or until a toothpick comes out clean.
- Cool for 10 minutes and then cut into squares.
- Serve warm and enjoy!
