Summer tomatoes are in full swing in the south. Tomato bushes are overflowing with juicy, ruby red tomatoes that need to be eaten and used in recipes. A good ol' southern tomato sandwich is usually my first thought, followed by what new tomato recipe I can try this year. Enter this creamy southern tomato vinaigrette recipe. This light, creamy tomato salad dressing has the subtle taste of tomatoes, and brightens up a salad like a beautiful southern sunrise.
This low-sodium and low-sugar tomato dressing is also healthy, with the health benefits of tomatoes, the health benefits of olive oil and the health benefits of garlic. With only four ingredients and an optional fifth with maple syrup (if you want a little sweetness), this creamy dressing can be whipped up in about five minutes.
To make this southern salad dressing recipe you will need olive oil, white wine vinegar, vine-ripened tomatoes, garlic and optional maple syrup. The gluten-free ingredients are whirled in a blender or food processor until smooth. Season with some salt and black pepper and it's ready to be spooned or poured over your favorite salad. It would also be a nice, refreshing dip for fresh cut-up vegetables.

Ingredients
- 1/2 cup olive oil
- 1 tablespoon white wine vinegar
- 3/4 cup chopped tomatoes
- 1 clove garlic
- 1 teaspoon maple syrup (optional)
Here's how to make it:
- Combine all the ingredients in a food processor or blender. (For even more flavor, you could add dried Italian seasoning or Tuscan seasoning. Any tomato will work for this recipe. If your tomatoes have lots of seeds, you may want to remove some of them or it could thin the dressing.)
- Blend until smooth.
- Taste and add more salt and black pepper, if needed, then serve. Store the salad dressing in an airtight container in the fridge for up to five days.
