Ingredients
Cupcakes
- 1 1/2 cups granulated sugar
- 1/4 cup brown sugar
- 2 1/2 cups flour
- 2 1/2 teaspoons baking powder
- 1 teaspoon salt
- 2 eggs
- 2/3 cup milk
- 2/3 cup orange juice
- 1 1/2 sticks (3/4 cup) butter, melted and cooled, divided (1/2 for cupcakes and 1/4 cup for glaze)
- 1 1/2 teaspoons vanilla
Glaze
- 3 cups powdered sugar
- 2 oranges (1/4 - 1/3 cup juice and zest)
Recipe Notes
- Juice the oranges with a fork or use a citrus juicer, which gets all the most juice from the oranges.
- Store the cupcakes in an airtight container to keep them fresh.
- You could omit the powdered sugar glaze, if desired.
- Try this recipe with lemons and lemon juice instead of oranges.
Here's how to make it:
- Whisk together the granulated sugar, brown sugar, flour, baking powder and salt in a mixing bowl.
- Add the eggs, milk, orange juice, 1/2 cup of the melted butter and the vanilla. Mix well.
- Spoon the batter into 24 muffin tins lined with baking liners, filling halfway full.
- Bake in a preheated 350-degree F oven for about 25 minutes, or until a toothpick comes out clean. Remove from the pans to cool.
- While the cupcakes cool, combine the powdered sugar, 1/4 cup melted butter, orange zest and orange juice to create the glaze. Dip the cupcakes into the glaze and allow it to set before serving.
