Ingredients

Cupcakes

• 1 1/2 cups granulated sugar
• 1/4 cup brown sugar
• 2 1/2 cups flour
• 2 1/2 teaspoons baking powder
• 1 teaspoon salt
• 2 eggs
• 2/3 cup milk 
• 2/3 cup orange juice
• 1 1/2 sticks (3/4 cup) butter, melted and cooled, divided (1/2 for cupcakes and 1/4 cup for glaze)
• 1 1/2 teaspoons vanilla

Glaze

• 3 cups powdered sugar
• 2 oranges (1/4 - 1/3 cup juice and zest) 

Recipe Notes

• Juice the oranges with a fork or use a citrus juicer, which gets all the most juice from the oranges.

• Store the cupcakes in an airtight container to keep them fresh.

• You could omit the powdered sugar glaze, if desired.

• Try this recipe with lemons and lemon juice instead of oranges. 

Here's how to make it:

1. Whisk together the granulated sugar, brown sugar, flour, baking powder and salt in a mixing bowl. 
2. Add the eggs, milk, orange juice, 1/2 cup of the melted butter and the vanilla. Mix well. 
3. Spoon the batter into 24 muffin tins lined with baking liners, filling halfway full.
4. Bake in a preheated 350-degree F oven for about 25 minutes, or until a toothpick comes out clean. Remove from the pans to cool. 
5. While the cupcakes cool, combine the powdered sugar, 1/4 cup melted butter, orange zest and orange juice to create the glaze. Dip the cupcakes into the glaze and allow it to set before serving.
