To make this chicken dinner you will need just a handful of simple ingredients. Here is what you need to gather from your pantry, spice rack and fridge: olive oil, chicken thighs (bone in and skin on), sea salt, black pepper, garlic powder, onion powder, smoked paprika, herbes de provence and chicken broth. The chicken broth adds moisture to the chicken as it bakes.
Herbes de provence is a French spice blend made with herbs from the Provence region. The main players in the spice blend are thyme, oregano, savory and rosemary, but other herbs are singing in the background. Most grocery stores carry herbes de provence on their spice aisle. Here's how to make homemade herbes de provence.

Ingredients
- 6 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon smoked paprika
- 2 teaspoons herbes de provence
- 1/4 cup chicken broth
Here's how to make it:
- Season the chicken on both sides with salt, black pepper, garlic powder, onion powder, smoked paprika and herbes de provence. (Instead of herbes de provence, you could use dried Italian seasoning, Tuscan seasoning, Mediterranean seasoning or your favorite seasoning blend. You could use chicken drumsticks, wings or breasts, but it will affect cooking time.)
- Heat the olive oil in an ovenproof skillet (cast iron works great) over medium-high heat. Add the chicken, skin side down, and cook until golden, about 4 to 5 minutes. Flip the chicken over and cook the other side for about same amount of time. (If you don't have an ovenproof skillet, transfer the chicken into a baking dish. Pour the chicken broth around the chicken and bake as directed.)
- Pour the chicken broth around the chicken pieces. Put the chicken into a preheated 400-degree F oven. Cook about 20 to 25 minutes, or until chicken has an internal temperature of 165 degrees F. Garnish with fresh rosemary, if desired. Store any leftover chicken in an airtight container in the fridge. Reheat as desired.
