I never get tired of roasted potatoes. This yummy lemon and dill roasted potatoes recipe with feta was such a hit as a side dish with dinner. The lemon and dill is a great combination with the salty feta adding just the right kick on top. These roasted potatoes only need enough prep time to cut and pop into the oven, and in a short 40 minutes they are warm and gooey and ready for your table.
To make these Greek-inspired potatoes you will need baby potatoes, olive oil, salt, black pepper, dried oregano, fresh garlic, a lemon for juicing and zesting, flat-leaf parsley, fresh dill and feta cheese.

Ingredients
- 2 pounds baby potatoes, cut into 1-inch chunks
- 2 tablespoons olive oil
- 1 1/2 teaspoons dried oregano
- 2 cloves garlic, grated or minced
- juice and zest of 1/2 a lemon
- 2 tablespoons chopped flat-leaf parsley
- 1 tablespoon chopped fresh dill
- 2 ounces feta, crumbled
Recipe Notes
- I used about 1 teaspoon of salt in this recipe, but season to taste.
- Use a sharp knife or kitchen shears to cut the fresh herbs.
- Store any leftovers in an airtight container in the fridge for up to four days.
Here's how to make it:
- Put the potatoes onto a parchment paper-lined baking sheet. Drizzle with olive oil, oregano, salt and black pepper. Use clean dry hands to mix everything well. Bake in a preheated 425-degree F oven for 25 minutes, tossing the potatoes halfway through.
- After 25 minutes, remove from the oven, add the garlic and place back in the oven for about 3 to 5 minutes.
- Place the potatoes on a serving platter and drizzle with the lemon juice and zest, parsley, dill and feta. Taste to see if you need any more salt and pepper. Serve and enjoy!
