The fresh parsley garnish is optional. The flavorful carrots are ready in only about 10 minutes and require minimal prep. I call that a perfect gluten-free side dish!

- 1 1/2 cups baby carrots (or 3 large carrots, halved lengthwise and cut into pieces)
- 1 1/2 tablespoons extra virgin olive oil
- 3/4 teaspoon oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- a fresh herb, such as parsley, for garnish (optional)

Recipe Notes
- You can use cut carrots or baby carrots for this recipe.
- Instead of oregano, you could use thyme or an herb blend such as Italian or Greek seasoning blend.

- Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
