Sometimes, you just crave a mouth-watering cheese dip. When a craving for queso dip hits, you need to respond in a big way. When not just any cheese dip will do, you have to try this drool-worthy taco meat queso dip recipe. It's so dang delicious that you just may eat the whole thing. Yes, you may ruin your dinner but it's so good that you won't care.
This addictive taco meat queso recipe uses four simple ingredients: ground chicken (or turkey or beef), taco seasoning, Velveeta cheese and Rotel diced tomatoes. That's it! And this spicy appetizer dip recipe is ready in only about 15 minutes. So easy!
Serve this gluten-free cheese dip with tortilla chips (scoop-type chips work best), crackers or fresh vegetables as an irresistible appetizer for gatherings of any kind. Just be sure to make enough to feed a crowd because it goes fast and everyone will want more. You also can serve it rolled up in warm tortillas. Delish!

Ingredients
- 1 pound ground chicken (or turkey or beef)
- 1 ounce (1 packet) taco seasoning
- 16 ounces Velveeta cheese, cut into cubes
- 10 ounces (1 can) Rotel Diced Tomatoes and Green Chilies
Here's how to make it:
- In a large skillet over medium heat, brown the ground chicken. Add the taco seasoning and 3/4 cup of water (or according to package directions). Simmer until water is absorbed. I used ground chicken in this recipe, but you could use ground turkey or beef if you prefer. I used a taco seasoning packet, but you can make your own taco seasoning, if desired.
- Add the Velveeta cheese cubes. (Velveeta is considered gluten-free by the celiac and GF community.)
- Add the Rotel.
- Stir until all is melted and combined.
- Serve in your favorite dip bowl or ramekins or small casserole dish alongside tortilla chips, crackers, vegetables, tortillas, etc. Store any leftovers (as if, ha!) in an airtight container in the refrigerator and reheat in the microwave.
