With two chicken breasts sitting in my refrigerator and not a lot of time to make dinner, I decided to make this crispy Mediterranean fried chicken breast recipe. This nutritious chicken recipe has just seven ingredients and is ready in only about 20 minutes. Low in sugar, fat and calories, and high in protein, this pan-fried chicken recipe fits into a healthy Mediterranean Diet and is absolutely delicious. Here's what you need in order to make these simple pan-fried chicken breasts: chicken breast, olive oil, panko breadcrumbs, oregano, turmeric, paprika and garlic powder. You blend the spices with the panko, coat the chicken in the mixture then pan-fry them until they're golden brown and crispy. So easy!
Serve this high-protein, budget-friendly recipe for dinner with your favorite side dishes. I served it over my creamy broccoli and tomato pasta and it was a dinner grand slam!

Ingredients
- 2 chicken breasts
- 2 tablespoons extra virgin olive oil
- 1/2 cup panko breadcrumbs
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon turmeric
Here's how to make it:
- On a plate, combine the panko, garlic powder, paprika and turmeric.
- Roll each chicken breast in the mixture until it is well coated with the breadcrumbs and seasonings. Season with salt and pepper, to taste, if desired. (If you'd like a little heat, feel free to add some crushed red pepper flakes. Use gluten-free panko if you want this recipe to be gluten-free.)
- Heat the olive oil in a skillet. Place the chicken breasts in the oil in the skillet.
- Fry the chicken until golden brown and crispy on both sides, about 7 to 9 minutes per side, depending on the thickness of the breasts. Chicken is done when it reaches 165 degrees F on a food thermometer. Store leftovers in a container in the refrigerator.
