This easy casserole recipe really helped me hit a dinner grand slam. Well, on some levels. I've made a few tater tot casseroles recently, all using ground beef. Not a shock to anybody, they were all delicious. How can you miss with a potato casserole? This ultimate chicken ranch tater tot casserole is made with cooked chicken, which intrigued me. I'm glad I made this easy casserole because it was crazy good, and also high in protein. Check out the health benefits of protein.
Like most tater tot casseroles, this one had very simple prep. The ingredient list was not bad either. For this chicken tater tot casserole recipe you need cooked chopped or shredded chicken (I used shredded), sour cream, cream of chicken soup, dry ranch dressing mix, cooked and crumbled bacon, shredded cheese, green onions and a bag of frozen tater tots. Instead of placing the tater tots on top of the casserole filling, everything is mixed together, poured into a dish and baked.
I said this was a dinner grand slam on some levels, because this is not the healthiest casserole. But I believe everything in moderation and that it can still be in your dinner rotation because of how tasty it is. To make this recipe a little healthier, use turkey bacon, low-fat sour cream and the healthier variety of cream of chicken soup.
Serve this cheesy potato and chicken casserole for dinner with a fresh vegetable or salad.

Ingredients
- 3 cups shredded or chopped cooked chicken
- 16 ounces sour cream
- 10 ounces (1 can) cream of chicken soup
- 1 ounce (1 packet) dry ranch dressing mix
- 5 - 6 slices bacon, cooked and crumbled
- 2 cups shredded cheddar cheese or Colby Jack
- 2 - 3 green onions, chopped
- 32 ounces (1 bag) frozen tater tots
Here's how to make it:
- Combine the chicken, sour cream, cream of chicken soup, dressing mix (dry), crumbled bacon, shredded cheese and green onions in a large mixing bowl. Season with black pepper. Stir well to combine. Because of the sodium in the canned soup and dry ranch seasoning, you don't need to add additional salt.
- Add the tater tots. Gently mix to combine. You do not need to thaw the tater tots.
- Pour into a 13x9-inch casserole dish that's been sprayed with nonstick cooking spray. You can make this casserole ahead of time and refrigerate until ready to bake. Add a few more minutes to the cooking time. This casserole can be frozen before being baked or after baking. Cool completely before wrapping and freezing.
- Bake in a preheated 350-degree F oven for about 45 minutes.
- Garnish with additional chopped green onions or fresh minced chives, if desired. Store the leftovers in an airtight container in the fridge. Reheat in the microwave.
