These easy eggplant rolls with a creamy feta filling are a simple Mediterranean recipe that can be served as a side dish with dinner or as an appetizer. Here is your shopping list for this low-carb eggplant recipe: eggplants, salt, olive oil, fresh basil and feta cheese. (Feta cheese may be the healthiest cheese in the world.)
The eggplant is salted before cooking, which helps draw out moisture in the vegetable and increase the flavor and creaminess. The eggplant slices are pan-fried in a little olive oil until soft, cooled, then spread with feta cheese and fresh chopped basil leaves. Roll them up and put them on a pretty platter.

- salt

- Cut the eggplant into thin slices lengthwise. Put them in a colander and sprinkle with salt. Let them sit for about 15 minutes, then rinse and dry with a paper towel.
- Heat a little olive oil in a large skillet. Cook the eggplant until golden brown on side sides. You may have to do this in batches. Remove to a plate to cool.
- Sprinkle each eggplant slice with some feta and basil. Roll them up. Serve. Store the eggplant rollups in an airtight container in the fridge.
