Eggplant & Feta Rolls Recipe: A Simple Mediterranean Appetizer or Side Dish

Eggplant may not be at the top of the popular vegetables list, but we're not sure why. Not only is eggplant tasty and easy to cook, eggplant has many health benefits. Eggplant has been used medicinally for thousands of years. According to WebMD, "in the ancient Indian system of ayurvedic medicine, practitioners used white eggplant to treat diabetes and the roots to relieve asthma."

These easy eggplant and feta rolls are a simple Mediterranean recipe that can be served as a side dish with dinner or as an appetizer. The eggplant is salted before cooking, which helps draw out moisture in the vegetable and increase the flavor and creaminess. The eggplant slices are pan-fried in a little olive oil until soft, cooled, then spread with feta cheese and fresh chopped basil leaves. Roll them up and put them on a pretty platter.

You could also grill the eggplant on a grill pan, indoor grill or outdoor grill. Try using different herbs or stir in some chopped sundried tomatoes, capers or olives.

Ingredients

  • 2 medium eggplants
  • salt
  • olive oil, for cooking
  • 12 basil leaves, julienned 
  • 4 ounces crumbled feta cheese

Here's how to make it: 

  1. Cut the eggplant into thin slices lengthwise. Put them in a colander and sprinkle with salt. Let them sit for about 15 minutes, then rinse and dry with a paper towel. 
  2. Heat a little olive oil in a large skillet. Cook the eggplant until golden brown on side sides. You may have to do this in batches. Remove to a plate to cool. 
  3. Sprinkle each eggplant slice with some feta and basil. Roll them up.
