Nonna's Creamy Italian Cucumber Salad Recipe Will Be On Repeat

Cucumber salads are always a hit and become fan favorites on 30Seconds. A recipe for creamy Italian cucumber salad made my stomach growl the other day, so I knew I had to make it. Some of the ingredients I questioned, so I got creative and came up with my own creamy Italian cucumber salad. My stomach was right! This is a super flavorful cucumber salad recipe. I know once I take it to my first family get-together, it'll be requested over and over.

The salad is made with sliced cucumbers (I used a seedless English cucumber), grape or cherry tomatoes (I used a mix of grape heirloom tomatoes I found at Trader Joe's), minced fresh garlic, chopped red onion and sliced green olives (you could use black olives if you prefer). The creamy Italian dressing poured over the top is full of flavor! The creamy dressing is a combination of mayonnaise, grated Parmesan cheese, balsamic vinaigrette, onion powder, garlic powder, Tuscan seasoning and crushed red pepper flakes. Toss the dressing with the salad ingredients and it's ready to be served or refrigerated until you're ready to serve it as a side dish for lunch or dinner.

Ingredients

Salad

  • 2 medium cucumbers (I used a seedless cucumber), sliced thin
  • 1 cup grape tomatoes or cherry tomatoes (I used heirloom cherry tomatoes)
  • 2 - 3 cloves garlic, minced
  • 1/4 cup chopped red onion
  • 1/4 cup sliced green olives

  • I didn't add any additional salt to this cucumber salad because my Tuscan seasoning blend has salt in it. But if you use dried Italian seasoning, add salt to taste. 
  • If you want to make the dressing healthier, use plain Greek yogurt instead of mayonnaise. 
  • This salad could easily be doubled for potlucks, cookouts or large families.

Here's how to make it: 

  1. Put all the salad ingredients into a bowl.
  2. In another bowl, stir together all the dressing ingredients. Season with fresh cracked black pepper, if desired.
  3. Mix well.
  4. Pour the dressing over the salad ingredients and stir to coat.
  5. Cover and refrigerate until ready to serve.

This recipe was one I'll make over and over again. Great flavors and so easy. I use S.A.L.T. Sisters Farmhouse Tuscan Spice Blend. My favorite that I bought in Sacramento, but you can buy it on Amazon, too.

OMG, this came out flipping awesome! I made a double batch, used half mayo, half yogurt. My olives were green stuffed with banana peppers plus a few Kalamata. For seasonings a tuscan blend and then tossed in some Trader Joe's soffritto, that has a nice little kick to it with red pepper flakes. I am finally becoming a cucumber lover ...well, beyond pickles that is. Thanks for the recipe!

Yeah! That makes me so happy! Will try your suggestions when I make it again, which I definitely will. That's one of the Trader Joe's spices I didn't buy. Added it to my list. :)
