Creamy High-Protein Boursin Pasta Casserole Recipe With Roasted Vegetables & Chicken by Candy Stephens

I made the TikTok pasta with Boursin cheese, and it is so rich and creamy! I never follow a recipe completely, even if it went viral, so I added other vegetables and some rotisserie chicken. The cheesy pasta recipe was absolutely delicious. I can't wait for the leftovers, too!
If this high-fiber, high-protein recipe was a one-pan pasta casserole recipe, that would be nice, but I don't like the way vegetables roast when they're too crowded. Because of that, I don't mind cleaning an extra pan for this creamy pasta recipe. To make this creamy Boursin pasta recipe you will need olive oil, grape tomatoes, zucchini, asparagus, fresh mushrooms, onion, garlic, Boursin cheese, pasta, a rotisserie chicken and fresh basil leaves. Because this recipe is loaded with tomatoes, asparagus, zucchini, mushrooms and onion, you really don't need a side dish. But, a fresh garden salad is always welcome with dinner.

Ingredients
- olive oil
- 2 cups grape tomatoes
- 1 zucchini, chopped
- 1 bunch asparagus, chopped (approximately 1 pound)
- 8 ounces fresh mushrooms, sliced
- 1 small onion, chopped
- 6 big cloves fresh garlic, peeled and halved
- 5.2 ounces (1 box) Boursin cheese
- 4 ounces cavatappi pasta or your favorite pasta (I used half a box of Banza cavatappi)
- 1/2 a rotisserie chicken, deboned and shredded or chopped
- 1 bunch basil, rough chopped (about 1 cup, or to taste)
Here's how to make it:
- Put the tomatoes, zucchini, asparagus, mushrooms, onion and garlic onto a large sheet pan. Drizzle generously with olive oil, kosher salt and lots of cracked black pepper. Put the whole round of Boursin cheese in the center of the pan. Drizzle with more olive oil and black pepper. Bake in a preheated 400-degree F oven for about 30 minutes. (I will probably use less pasta next time because I prefer all the healthy vegetables.)
- Cook the cavatappi according to package directions. Drain, reserving 1/2 to 1 cup of the pasta water
- Transfer the roasted vegetables and Boursin cheese to the pot with the pasta. Add the chicken and 1/2 to 1 cup of the pasta water (you could use chicken broth). Mix until creamy. Top with the basil. (If you want a vegetarian recipe, leave the chicken out.) Store any leftovers in an airtight container in the fridge and reheat in the microwave.
