This quick chicken taco recipe is made with rotisserie or leftover cooked chicken and gets flavor and a texture punch with crunchy tart apples and spicy radishes. To make this fall-in-love tacos recipe you will need to gather the following ingredients from your fridge and pantry: cooked chicken meat (leftover chicken or rotisserie chicken), olive oil, red onion, ground cumin, chili powder, garlic powder, nutmeg, an apple, radishes, lemons for juicing and flour or corn tortillas. You can fancy it up with optional ingredients like sour cream or yogurt and fresh cilantro.

Ingredients
- 1 tablespoon olive oil
- 1/3 cup diced red onion
- 4 cups shredded rotisserie chicken or leftover chicken
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- 1/4 teaspoon garlic powder
- dash of nutmeg
- 1/2 cup water
- 1 large apple, cored and sliced or diced
- 5 radishes, sliced
- 1 teaspoon lemon juice
- tortillas, warmed
- lime wedges, sour cream or yogurt and chopped fresh cilantro, for serving (optional)
Here's how to make it:
- Heat the olive oil in a skillet. Add the onion and cook until soft, about 3 minutes.
- Add the chicken, cumin, chili powder, garlic powder and nutmeg. Season with salt and pepper. Mix well.
- Add the water and simmer until water has evaporated. Add more salt and pepper, if needed.
- In a bowl, combine the apples, radishes and lemon juice. Toss. (If you want a creamier slaw, stir in a tablespoon or two of yogurt or sour cream.)
- To serve, spoon some of the chicken into a warm tortilla. Top with the apples and radishes. Serve with lime wedges, sour cream and fresh chopped cilantro, or your favorite taco garnishes. Store any leftover chicken and slaw in an airtight container in the fridge and reheat in the microwave.
