Baked chicken dinners are perfect for busy weeknights. This is the best balsamic vinaigrette chicken recipe I’ve tried. With just a few ingredients, the chicken turns out juicy and tangy, and is ready in only about 30 minutes. This is a high-protein dinner you'll want to make over and over again. To make this easy baked chicken recipe you will need the following gluten-free ingredients: boneless/skinless chicken thighs and breasts, olive oil. balsamic vinegar (check out the health benefits of balsamic vinegar), honey, lemons for juicing, fresh garlic, dried thyme, dried oregano and ground paprika. I used both chicken breasts and thighs, but you could use just breasts or just thighs if you prefer.
Balsamic vinegar is an ingredient I love cooking with. Balsamic vinegar is a dark, rich vinegar from Modena, Italy, that is made with concentrated grape juice. The syrupy vinegar is generally aged in wood barrels for two years and up to over 25 years.

Ingredients
- 1/3 cup extra virgin olive oil
- 1/3 cup balsamic vinegar
- 1 tablespoon honey
- juice of 1 lemon
- 2 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 6 boneless/skinless chicken thighs
- 3 boneless-skinless chicken breasts, cut in half lengthwise
Here’s how to make it:
- In a large bowl, whisk together the olive oil, balsamic vinegar, honey, lemon juice, garlic, thyme, oregano and paprika.
- Season the chicken with salt and pepper. Add the chicken to the marinade and toss to coat. (If you like, you can marinate the chicken for an hour or two in the refrigerator, but it’s not necessary.)
- Put the chicken into a baking dish.
- Bake in a preheated 425-degree F oven for about 25 to 30 minutes or until the chicken is cooked through. Chicken is cooked through at an internal temperature 165 degrees F on a food thermometer. (I pulled the chicken out of the oven after about 15 minutes to turn each piece over, coating it again in the sauce.) Store any leftover chicken in an airtight container in the fridge and reheat in the microwave.
