Here is your shopping list for this excellent egg salad recipe: eggs, mayonnaise, mustard and green onions. Hard boil the eggs and peel. Mash the egg yolks then mix with the other ingredients. Season with plenty of salt and pepper. You could add some chopped fresh herbs out of your herb garden. Use whatever type of mustard you prefer. Ingredients
- 8 hardboiled eggs, peeled
- 1/3 mayonnaise (or to taste)
- 1 tablespoon mustard (or to taste)
- 3 green onions finely chopped or 2 - 3 tablespoons minced red onion
Here's how to make it:
- Cut the eggs in half. Put the egg yolks into a bowl. Chop the egg whites and put them into another bowl.
- Add the mayonnaise and mustard to the egg yolks. Mash together to combine until smooth. Season with salt and pepper.
- Add the egg whites and onion. Mix gently to combine. Taste and add more salt and pepper, if needed. (Chopped fresh chives would be delicious in this egg salad.) Serve as desired. Store the egg salad in an airtight container in the fridge for up to three days.
