The fluffy almond flour pancakes are made with almond flour, baking powder, salt, almond milk, eggs, maple syrup and vanilla. These pancakes have a lighter consistency than regular pancakes made with all-purpose flour. Because of that, they are best made into smaller pancakes.

- 1 1/3 cups almond flour
- 1 teaspoon baking powder
- dash of salt
- 1/4 cup almond milk
- 2 eggs
- 1 tablespoon maple syrup
- 1 teaspoon vanilla
Here's how to make it:
- Whisk together the almond flour, baking powder and salt in a bowl.
- In another bowl, stir together the almond milk, eggs, maple syrup and vanilla.
- Combine the wet ingredients with the dry ingredients.
- Heat a large skillet over medium heat. Spray with nonstick cooking spray or add a few drops of vegetable oil. Pour about 1/4 cup of the batter for each pancake into the pan. Cook for about 2 minutes per side or until cooked through.
